My bird won't eat vegetables at all

I've tried everything — finely chopped, mashed, hidden in other food, on skewers, in foraging toys. My Senegal parrot refuses ALL vegetables. Fruit is fine but I know they need veggies too. Help!

Update: took everyone's advice and things are improving. Skittles is slowly coming around. This forum is the best.
